Eggplant Casserole
This dish was served to me last week when I was eating with my family and I immediately thought, wow this I must share with you. When it turned out that this dish is very easy to make I was a fan!
What do you need?
Ingredients:
- 2 eggplants
- packet of tomato frito
- 1 onion
- 1 clove of garlic
- fresh thyme
- fresh parsley
- italian herbs
- salt to taste
- olive oil
- grated cheese
How to make this oven dish?
- Peel the eggplants and cut them into slices of about 0.5 cm. Put a little olive oil in a grill pan and grill the slices alternately. Let the slices drain on a piece of kitchen paper.
- Chop an onion and a clove of garlic and sauté together until the onions are translucent. Then add the tomato frito with the thyme, parsley and Italian herbs. Season this mixture with a little salt and let it simmer.
- Then layer the mixture in the baking dish, first a layer of sauce, then cover with eggplant and so on.
- Finally, apply the grated cheese to the baking dish and place the dish in the oven at 180 degrees for 20 minutes.
