RAW CRIOLLO COCOA: THE QUEEN OF THE COCOA SPECIES
Criollo cocoa, also known as the “the queen of cocoa”, is very rare. Only 5-10% of the world’s cocoa production is Criollo. It is native to Venezuela, Colombia, Nicaragua, Guatemala and Mexico and the islands of Trinidad, Jamaica, and Grenada. Criollo cocoa is difficult to grow and extremely vulnerable to weather conditions. Apart from sufficient care and attention, a perfect climate and soil conditions are needed for a good harvest. Criollo is greatly appreciated for its delicate, mild flavor and intensive aroma.
Raw cocoa contains a great number of flavonoids. These antioxidants can be found in vegetables and other plants. They contribute to maintaining a healthy heart and increase the healthy HDL cholesterol in our blood. In addition, raw cocoa is a very good source of magnesium and iron. Magnesium is essential for our energy levels and it keeps our brain and nervous system healthy. Moreover, magnesium plays an important role in marinating strong muscles, bones, and teeth and keeps your blood pressure at a healthy level. Iron, in turn, is very important for the formation of haemoglobin which aids in the transportation of oxygen into the bloodstream and also helps the metabolism.
Last but not least, raw criollo cocoa contains phenylethylamine – the love drug. This is a substance your body makes when you are in love. Phenylethylamine also increases your energy levels and makes you feel good in your own skin!
Unfortunately, there is no room for comparison between raw cocoa and a chocolate bar. During the production of chocolate, the raw cocoa loses some of the flavonoids, enzymes and other nutrients it contains. Not to mention that the addition of sugar makes a chocolate bar a lot less healthy than raw cocoa.
